Baby Photos

My mom emailed me these photos today. Man was I ever a fat baby. But now we know where SuperChic, formerly SuperChunk, and Rapunzel get their chubbiness from. Well, their Daddy wasn’t exactly small either, so they just had it coming to them. Hopefully no one who may see these today, will be at SAJ’s shower on Saturday. Posted by Picasa

Baking Machine!

I am a baking machine.

Today I made French Almond Strawberry Macaroons, Pink Strawberry cupcakes, and Cranberry White Chocolate Shortbread Cookies.

If you ever have the desire to make French Almond Strawberry Macaroons, make sure you have lots of time, and exactly what the recipe calls for as far as gadgets and such. It would have been so much easier.

First I had to attempt to make sliced and chopped almonds into a finely ground powder. Sounds easy right, wrong. First they went into the Tupperware Chopper, then into a little cheese grinder like they use at Olive Garden. Yet, it was still not as finely ground as it should have been. Next time I’ll just but almond flour like the recipe suggested.

They didn’t come out as pretty as I would have liked them to but they do taste pretty good. The cookies taste like almond cookies you’d get at a chinese restaurant, while the filling is a sweet meringue strawberry buttercream. Yummy. I also didn’t end up with as many as I would have liked. But since it took me almost three hours to make about 37 pieces, which only makes 18 cookies. I didn’t make the chocolate macaroons, which was kind of the whole point. You know following the whole pink and brown theme for SAJ’s babyshower.

Then I made 23 pink strawberry cupcakes from Pillsbury Strawberry Cake Mix. i don’t know how you’re supposed to get 24 out of the mix. But my advice to you is don’t ever buy this product. The mix is new and yet the cupcakes are still flat. The only way to get them so they don’t look flat is to overfill the cups. I will never buy this type of cake mix again.

After that it was on to the Shortbread cookies. The best things about these cookies is that you can eat the raw dough because there are no eggs in it. Plus if you use a cookie scooper you get way more cookies from the recipe than it says, and there still good sized cookies. Each batch is supposed to make 4 dozen. But I get 5 dozen. Even more yummy goodness.

So that means I made 30 macaroon pieces, 23 cupcakes, and about 120 shortbread cookies.

Tomorrow, it’s more time in the kitchen as we, my MIL and I, make deviled ham, and chicken sandwich fillings for our sandwiches on Saturday. Then it’s into the car and off to the beach!

Then more work, and some more work, then fun at the shower, then more work, sleep, and the drive home. Then maybe on Monday I’ll be working with Shawn at Ken’s shop. Yep, that’s rightI may finally have a job. We’ll see.
